Quinoa Tabouli

Ingredients
- 2 cups quinoa
- 2 medium tomatoes finely diced
- 1 medium cucumber diced
- 1/2 cup chopped parsley
- 1 medium tomato for dressing
- 1/3 cup apple cider vinegar
- 2 tbsp Dijon mustard
- 1/4 tsp cumin
- 1 tsp garlic powder
Instructions
- Rinse the Quinoa and cook 2 cups in a pot following directions on the package. Allow to cool. Finely chop 2 tomatoes, cucumber and parsley and mix in the cooled quinoa.Dressing:Blend tomato, Dijon mustard, apple cider vinegar, cumin and garlic powder.Pour over the salad and gently mix it in.Chill and then serve on a bed of lettuce of choice.
